Buttermilk and Oat Pancakes.

2 cups of Buttermilk

1 egg, beaten

2 tbsp Honey

1 tsp vanilla

3/4 cup Flour

1 cup oats

1 tsp baking soda

1/4 tsp baking powder

1/2 tsp cinnamon

1/2 tsp all spice

1/4 tsp salt


Add wet ingredients to one bowl and mix until combined. If you don’t have buttermilk you can substitute with milk and a few splashes of vinegar or lemon juice. Let it sit to the side for a few minutes. The milk will curdle a bit and be a great sub for buttermilk.


Add oats to your wet mixture and set aside to let them hydrate and soften.


Add dry ingredients to another bowl and mix until combined.


Add dry ingredients to the wet mixture and stir until just combined. Remember not to over mix the batter so the gluten doesn’t over develop and make the pancakes tough.


Cook these on a hot skillet using a 1/4 cup to spoon out.


We love these with homemade jam and powdered sugar. So good!! Enjoy!
